Keto Mint Chocolate Protein Bites
These low-carb Mint Chocolate Protein Bites are sugar-free, low-carb, and packed with superfoods. Best of all, these fat-bombs are dairy-free as well. They are a super-clean source of energy and a tasty treat all in one.
Mint has been used for thousands of years for its healing powers.
It is known to aid in digestion and have antioxidant and anti-inflammatory properties.
Chocolate: 100% Cocoa
Not only is chocolate a source of healthy fat and a known antioxidant it has many other health benefits as well.
Keto dieters know all too well how great coconut oil can be as a healthy fat source, but it’s also great for your cholesterol and aids in weight loss.
For this recipe, it’s best to use refined coconut oil because it doesn’t have a strong coconut flavor.
Collagen Peptides are among the hottest new superfoods right now.
They are a type of protein, and you can buy the powder form which is just like regular protein powder but flavorless.
We all know the word collagen from wrinkle cream commercials and this is the same stuff.
Collagen Peptides are the proteins that improve skin elasticity among many other wonderful benefits including healing properties.
For this recipe, like many of my other low-carb sweets(link), I use powdered Swerve.
It may not be a superfood, but to me, it is a miracle food. It is every bit as delicious as sugar, with none of the calories or carbs. That’s definitely a win for me.
Simple Process For Mint Chocolate Protein Bites
Step 1: Prepare the Pan
For this step, I use my mini muffin pan lined with paper liners. These end up being the perfect size for a bite-sized treat.
Step 2: Melt and Stir
First, you will need to melt the chocolate. I do this in my big glass measuring cup in my microwave.
I melt the chocolate in about 1-minute increments.
Once it is liquified, I add the coconut oil into the cup and melt it as well.
Once both are completely liquid and mixed, I add the peppermint extract.
Then, I add the Swerve and stir in well.
After that, add the collagen, one scoop at a time, stirring in completely after each scoop.
Step 3: Pour
Pour the chocolate mixture into the muffin cups.
This part is pretty easy if you use the big glass measuring cup.
Step 4: Freeze
Finally, you will place this mixture in the freezer. They harden very quickly and will be ready within about 20 minutes.
I transfer mine into a Ziploc bag and leave them in the freezer because I enjoy the cold taste, but you could also keep them in the fridge once they harden.
Mint Chocolate Protein Bites Recipe:
- 2 ounces Unsweetened Chocolate
- ½ cup Coconut Oil
- ½ cup Confectioners Erythritol (Swerve)
- 5 ounces (5 Scoops) Collagen Peptides
- 1 tsp peppermint extract
- Line mini-muffin pan with muffin cups.
- Melt chocolate.
- Add coconut oil and melt.
- Add peppermint extract and stir until completely mixed.
- Stir in swerve, and Collagen Peptides.
- Pour into muffin cups.
- Freeze for 20 Minutes.

Note: Erythritol (Swerve) is often calculated wrong in apps and nutrition calculators. It is actualy a zero carb, zero calorie food, because of the way it is processed by your body.
