This keto chocolate protein bites recipe is FULL of ingredients that are packed with health benefits. Not only is it a perfect keto food, but it’s packed with vitamins and minerals.
Mint
Cultures around the world have used mint for 1000s of years for its healing powers.
It is known to aid in digestion and have antioxidant and anti-inflammatory properties.
Chocolate: 100% Cocoa
Not only is chocolate a source of healthy fat and a known antioxidant, but it also has many other health benefits.
Coconut Oil
Keto dieters know all too well how great coconut oil can be as a healthy fat source, but it also aids in your cholesterol and aids in weight loss.
For this recipe, use refined coconut oil because it has a more mild flavor than the unrefined options.
Collagen Peptides
Collagen Peptides are among the hottest new superfoods right now.
This protein powder usually comes unflavored and touts many benefits from joint health to wrinkle prevention.
Erythritol
For this recipe, like many of my other low-carb sweets(link), I use powdered Swerve.
It may not be a superfood, but to me, I think it is a miracle food. It is every bit as delicious as sugar, with none of the calories or carbs. It’s the only thing I could find to help me kick the sugar habit for good!
Simple Process For Mint Chocolate Protein Bites
Step 1: Prepare the Pan
For this step, I use my mini muffin pan lined with paper liners. These end up being the perfect size for a bite-sized treat.
Step 2: Melt and Stir
First, you will need to melt the chocolate. I do this in my big glass measuring cup in my microwave.
I melt the chocolate in about 1-minute increments.
Once it is liquified, I add the coconut oil into the cup and melt it as well.
Once both are completely melted and mixed, I add the peppermint extract.
Then, I add the Swerve and stir in well.
After that, add the collagen, one scoop at a time, stirring in after each scoop.

Step 3: Pour
Pour the chocolate mixture into the muffin cups.
This part is pretty easy if you use the big glass measuring cup.
Step 4: Chill or Freeze
Finally, you will place this mixture in the freezer. They harden very quickly and will be ready within about 20 minutes.
I transfer mine into a Ziploc bag and leave them in the freezer because I enjoy the cold hard texture, but you could also keep them in the fridge once they harden.

Keto Mint Chocolate Protein Bites Recipe:
- 2 ounces Unsweetened Chocolate
- ½ cup Coconut Oil
- ½ cup Confectioners Erythritol (Swerve)
- 5 ounces (5 Scoops) Collagen Peptides
- 1 tsp peppermint extract
- Line mini-muffin pan with muffin cups.
- Melt chocolate.
- Add coconut oil and melt.
- Add peppermint extract and stir until mixed.
- Stir in swerve, and Collagen Peptides.
- Pour into muffin cups.
- Freeze for 20 Minutes.

Note: Erythritol (Swerve) is often calculated wrong in apps and nutrition calculators. Although it sometimes shows as having many carbs, it is actually a zero-carb, zero-calorie food. Your body does not process the carbs in erythritol.
