Hide Peppers and Onions
I use the frozen pepper and onion blend for this recipe. While it’s not at all spicy, sometimes the kids can get a little squeamish when they see the vegetables.
I just pop them in the food processor for a few seconds until they are super tiny. The kids never even notice. Of course, you could skip that step and dice them if you prefer.
Step One: Mix all the Ingredients
I just dump all the ingredients in the mixing bowl and stir with the dough hook on low. You’ll still have to periodically scrape the bottom of the bowl with a spatula.
It takes a while for all the ingredients to be mixed. It will be a very thick mixture. The KitchenAid makes it an easy task.
However, it’s not too difficult to mix the ingredients by hand. My biggest complaint is that it’s cold. My trick is to use rubber gloves to keep my hands warmer.
Whichever mixing method you use it’s important to make sure to get all of the cheese and almond flour off of the bottom of the bowl.
Step 2: Roll into Balls
Make the sausage into 1.5-2 inch diameter balls with your hands and place them on a baking sheet or large glass pan.
It’s important to try to make the balls as close to the same size as possible. This way, they’ll all finish baking at the same time.
Step 3: Bake the Keto Sausage Balls
Bake about 15 minutes at 350 or until crispy on the outside.
Note: A lot of oil will come out of these sausage balls while baking. I usually drain the oil off about halfway through.
- 2 lbs. all-natural ground sausage
- 1 cup pepper and onion blend
- 2 cups grated cheddar
- 2 cups almond flour
- 1 tbs baking powder
- 1 teaspoon sea salt
- Preheat oven to 350.
- Stir all ingredients together until well combined. There should be no flour or cheese in the bottom of the bowl.

This recipe is low-carb, but still high in calories. So be careful with this one, especially since their bite-sized form makes them perfect for over-eating.
However, this is the perfect recipe to bring to a party where there will be unhealthy options.
It will give you something low-carb to have while not feeling like you are being totally restricted.
As long as you are disciplined and save room in your macros for them, these sausage balls are perfect!
I love them when I’m craving something “bad” or feeling super snacky. Sometimes a girl just wants something sweet-salty and crispy.
